Easy Goat/Feta Cheese Salad

1 Large Bowl of Mixed Baby Greens (the more variety, the better)
2 Handfuls of Baby Spinach
1 Handful of Sunflower Seed Sprouts or Clover Sprouts
1/4 cup Goat Cheese or Goat/Sheep Feta
1/4 cup Pitted Kalamata Olives
1/4 cup Pine Nuts (lightly browned in a pan)
1 Red Pepper, cut in strips (can be roasted for easier digestion and better flavor)
1 Yellow Tomato, cut into wedges
1-2 Tblsp of Olive Oil
Fresh Lemon or Lime Juice
1 Clove of Fresh Garlic, crushed or Garlic Powder (optional)

In a large salad bowl, add in all of the greens and sprouts. Break the cheese into crumbles and sprinkle over salad. Add olives. You may wish to chop them. Cut red pepper into strips and slice tomato into wedges. Add them to the salad. Place pine nuts in a small skillet without oil. Above a flame, shake them in the pan until they turn golden brown. Add them to the salad. In a small bowl, whisk the crushed or powdered garlic with the olive oil and juice of 1/2 lemon or 1 whole lime. Can add sea salt and pepper to taste. Pour the mixture over the salad and toss it.
