Healthy Morning Muffins/Bread Mix Together Organic Ingredients in large bowl: 4 Cups Rolled Oats Mix Together Organic Ingredients in large bowl: 2 Whole Eggs Variations & Substitutions: Can use dried cranberries, blueberries, cherries or chopped figs instead of raisins; Instead of raw walnuts, can use raw pecans. 1cup spelt or oat flour instead of 2 bananas; 3-4 droppers of liquid stevia or ½ cup date sugar instead of agave; Pears or peaches instead of apples. Almond milk or rice milk instead of soy milk. Preheat oven to 325. Recipe makes 2 dozen muffins; 1 dozen muffins plus one loaf; or 2 loaves. Stir the liquid into the dry mixture. Texture should be moist and consistency somewhat liquid but not thick or overly runny. Add extra soy milk if needed. Grease muffin pans and or loaf pans; spoon mixture into pans and press down so the ingredients will stick together. Muffins will cook for 10-12 minutes; loaves will bake for 35-40 minutes. When lightly brown and spongy to the touch remove from oven to cool on a rack. They will self cook a little longer. |
