Sally's Soup Recipe

1 Bunch Celery
1 Bunch Parsley
1 Sm Bag Carrots
1 Leek
6 Cloves Garlic
3-4 Potatoes
1 Parsnip
6-8 Zucchini

You may add any other veggies you want. You can also add Chicken, tofu or beans for added protein. Use spices and sea salt according to your taste.

Pre-chop all the veggies. Get out a big cooking pot. Over medium flame, stir fry or saute the celery, garlic, and leek. After they have become translucent add in the chopped parsley. Next add in the hard veggies: carrots, parsnip and potatoes. After they have softened add in the sliced zucchini. The mixture will become a thick stew. Add 1 gallon of water or 1 quart of water and a box of organic vegetable broth. Simmer uncovered for 45minutes. This makes enough soup for a few days and extra for freezing.
